Pinotage Cabernet Sauvignon 2024

Bold, full-bodied blend with notes of Black Forest gâteau, ripe cherries and subtle cigar box spice. Layers of dark plum, blackberry and cocoa unfold on the palate, supported by a velvety texture and soft, polished tannins. Well-balanced and smooth, it finishes long with hints of dark chocolate and gentle oak. A refined, indulgent wine with excellent depth and harmony.

Cultivar:
75% Pinotage and 25% Cabernet Sauvignon

Vineyards:
Grapes are sourced from the Helderberg region in Stellenbosch, where the combination of decomposed granite soils and a temperate climate allows for the development of complex fruit profiles and balanced acidity.

Viticulture:
Vines are managed with vertical shoot positioning and minimal irrigation to encourage concentrated flavours. Grapes are hand-harvested at optimal ripeness to preserve the unique characteristics of the variety.

Vinification:
After destemming and gentle crushing, fermentation occurs in stainless steel tanks with regular pump-overs to extract colour and tannins. The wine undergoes malolactic fermentation and is aged in French oak barrels for 12–14 months to enhance complexity and integrate flavours.

Wine Analysed Profile:

  • Tasting notes: black forest gateau and hints of cigar box and ripe cherries. Soft tannins, ripe forest fruits and a lingering finish.
  • Alcohol / Acidity / pH / Residual sugar: Typical style ranges: 14–15% alc., total acidity 5.5–6.5 g/L, pH ~3.5–3.7, residual sugar dry.

Maturation & Ageing Potential:
Best enjoyed within 5–8 years, with potential for further development in bottle.

Serving Suggestion:
Serve at 16–18°C. Ideal with grilled meats, barbecued dishes, and mature cheeses.
